My New Years resolution for this blog is to post something twice a month, because I realize I don’t post enough lol 😊
I hope the first couple of days of 2016 have been good, it’s always nice when New Years is on a weekend so that if you only work during the week then you get the extra time to relax and contemplate, which is exactly what I’ve been doing. Eating has been especially tricky for the last 5 months of my life after learning about my food sensitivities and now my doctor has ordered the paleo autoimmune diet so I have been busy looking up recipes that are grain, dairy, and sugar free. There’s a little more to it than that but that’s the majority of it. But, there is good news, and thanks to the help of some cookbooks I got for Christmas (from mom and sister-in-law), there will be some new recipes coming your way!
Here’s the first one, a simple and delicious breakfast to sustain me (and you) until lunch time:
Sweet Potato and Ham Scramble
2 cups each dice sweet potatoe, nitrate free ham or turkey ham, and spinach.
3 tablespoons olive oil
Garlic salt and pepper to taste
Heat your skillet, then pour in your oil and let it heat up just till it starts to smoke. Add your potatoes and cook till tender remove them from the skillet into a bowl and then add your ham and cook until browned. Throw in your spinach and potatoes and stir till spinach is wilted don’t forget to season but remember the ham is already a little salty. And you’re done! Put leftovers in a covered bowl in the fridge so you can scoop out what you want for breakfast during the week.
You can add onions, bell pepper, or eggs if you want and it would be tasty too the purpose of the autoimmune paleo diet is high protein with mega vegetables so that inflammation is reduced.
